When it comes to sugar sources for rum production, two options prevail: molasses and fresh cane juice. Given our distance from the cane fields, harnessing fresh juice poses challenges due to spontaneous fermentation during transport. We've opted for molasses—a byproduct of crystal sugar production—yielding a stable and safer liquid for transport, as the yeast is unable to multiply in its thick, viscous embrace.
